Endive Salad – Nana’s Recipe

     Pick a nice head of endive from the garden.  Rise it and then soak it in a tub of water for ten minutes or longer.  Remove the endive and drain it.  If you suspect it might still have some dirt in it, repeat.  Chop the endive and put it in a big bowl.

   Cut up 5 pieces of bacon. Fry with a small or medium chopped onion. Beat 2 eggs, ¼ cup vinegar, ¾ cup water, and 2 tablespoons of sugar. Add this to the bacon and onion. Bring to a boil and pour it over the chopped endive. Also good with dandelion greens. Add a tablespoon of corn starch if you want the dressing to be thicker.  Increase the vinegar (to 1/3 or ½ cup) and decrease the water if you like it more sour.
